Blue Oyster:

The blue oyster is one of the most quickly fruiting oysters. They can withstand the winter and will bear fruit in temperatures as low as 55 degrees! This sort of oyster is usually found at fine dining establishments. The mushrooms are thinner and more delicate than some of the other oysters, but they have a more rich flavor, making them one of the most popular.

The Black Pearl King Oyster

is a cross between the European Trumpet Oyster and the Japanese Brown Oyster. As a consequence, the highest “Umami” taste profile was achieved in an oyster mushroom. This is one of the best-tasting oysters we’ve ever had. These are slower to fruit, but they produce huge, thick mushroom caps and prefer temperatures on the colder side of the spectrum.

Oyster, Pink:

These are one of the most enjoyable mushrooms to cultivate. The vibrant pink mushrooms resemble flowers and can add a splash of color to any kitchen! The vivid pink hue of this oyster, which thrives in the tropics, is visible even on the mycellium. Pink oysters prefer warmer weather and thrive in temperatures ranging from 70 to 82 degrees. The pink oyster has a distinct “ham” flavor and is a popular item at our farmers market. These mushrooms are delicious on pizza and go well with almost any pork dish.

Oyster, Yellow/Golden:

Another gorgeous flower-like fungus to cultivate is the golden oyster. The caps are tiny and fragile, and they develop in large clusters. They thrive in a wide range of climates and temperatures, and they are quite simple to cultivate. They have a nutty flavor that some people compare to cashews or almonds. They work well in almost any recipe. This is an excellent pick for any new grower.

White Pearl Oyster:

Another easy-to-grow oyster, the white pearl oyster develops quickly and matures to a dazzling white to light grey color. These mushrooms are average in size, neither too thick nor too thin.
